Tapas (at least one of them)

Salmon Rillettes
A piece of salmon (not too fatty) 1/3 of mayo + 2/3 of creme fraiche, 1 lemon, dill, salt & white pepper. All ingredients can be adapted depending to your taste: more or less lemon, mayo, dill, etc... Mix everything, put the paste in a tupperware, and into the fridge for the night. Dead easy and really tasty as (false) tapas with a glass of white, or a beer & Aquavit combo.

Ensalada de Atún
... or tuna salad. We have discovered this one in The canaries years ago. Easy to do, and super good.
Just soften on low heat onions and paprikas in a good spanish olive oil. When soft and cold, add vinegar, parsley, salt, pepper and a tin of white tuna preserved in oil (preferably). Put in the fridge for a few hours. Serve with tostadas: toasted country bread rubbed with garlic and half a tomato, then generously sprinkled with olive oil. Great as late evening snack with a glass of white.

We've bought this white tuna last years while in the Canaries. Money well spent.
